Star-Spangled Berries
A great summer dessert
Serves:
4 Ingredients:
- 32 Ounce(s) strawberries
- 2 Pint(s) blueberries, fresh
- 4 Tablespoon(s) sugar substitute
- 1 Tablespoon(s) plus 2 tsp lemon juice
- 2 Cup(s) ricotta cheese
- 2 Teaspoon(s) vanilla extract
Directions:
- Halve or quarter strawberries, depending on size. Combine strawberries, blueberries, 1 tablespoon of the sugar substitute, and 1 tablespoon of the lemon juice in a large bowl.
- Process ricotta, remaining 3 tablespoons sugar substitute, remaining 2 teaspoons lemon juice, and vanilla in a blender or food processor until ricotta is smooth, about 2 minutes.
- Spread ricotta mixture evenly on the bottom of a wide, shallow serving bowl or 4 quart rectangular serving dish. Top evenly with the berries and serve.
